June’s Recipe: Pickled Beet Relish Recipe

I love beets in the summer time. My local farmer’s market is a great place to buy fresh beets, smelling earthy and bundled in bunches, just waiting to be enjoyed. This relish recipe comes from the Küche Kochen cookbook available from the AHSGR bookstore. I just added some slivers of red onion for extra flavor and more cloves. The two pint jars look so pretty in my fridge–I’m looking forward to serving them in a few days for salad night. My husband and I make a few fresh salads and cut into a crusty sourdough loaf. Just right for a hot summer’s day.
